Quick and Easy Meal Prep for New Moms

I’ve mentioned in the babies’ monthly updates that I have been struggling with my postpartum body. Obviously I am incredibly proud of my body for growing and carrying our perfect baby girls! I even made it to my scheduled c-section date of 36 weeks and 4 days, which is really amazing when you’re pregnant with twins. But the reality is, my body has changed and I wasn’t quite prepared for it. I knew my body wouldn’t be the same after pregnancy but that still didn’t prepare me for how emotional I would feel after my babies were born and I was suddenly left with a body I didn’t recognize.

Now that the girls are 4 months old and on a pretty good schedule, I have been able to start getting back into a routine to tone up and feel better about my body. I’ve been working out for 30 minutes almost every day and focusing on eating healthy, properly portioned meals.

Today I’m going to be sharing the easy meal prepping I have been doing lately, which has been crucial to keeping me on track with my eating. I’ve shared meal prep ideas before and although they truly don’t take very long, I just don’t have that kind of time to dedicate to meal prepping right now. Taking care of two babies is very time consuming! Everything I am sharing today can be done in an hour while your baby (or babies!) nap


Breakfast

I have been loving Kodiak Cakes lately! I make a big batch using my griddle and it takes no time at all. I will wash and cut fruit while I make the pancakes so that I am getting multiple things done at one time. A short cut would be to use frozen fruit to top your pancakes which requires no meal prep. I like to make sure and have protein with my breakfast so I usually keep frozen breakfast sausage on hand and I heat it up when I’m ready to eat. You could also hard boil some eggs or make scrambled eggs if you have extra time.

Another easy meal prep breakfast idea is oatmeal packets. I like to make them myself so I can control how much sugar is in them. I have followed THIS recipe before and made several servings to store in the pantry. Then when I am ready to eat, I add hot water and some fruit and I have a healthy breakfast. Again, I will add a protein to go with it such as breakfast sausage or eggs.

Another breakfast idea that requires little to no meal prep is Greek yogurt topped with granola and fruit. If I have time I will portion out the yogurt and granola and wash fruit in advance so everything is ready to go in the mornings when I’m starving and need a healthy breakfast. But this is a quick and healthy breakfast you can make on the spot as well.

Lunch

Meal prepping lunch for the week is super important to keep me on track, especially since I am working from home now and I have access to my fridge and pantry all day long. Having healthy lunches already prepared is crucial for me. Recently I have been making some variation of rice, vegetables, and protein for lunch. I typically use my crockpot to make slow cooker buffalo chicken or salsa chicken or teriyaki chicken. Then I make rice and roasted vegetables so I have a complete meal. You could use minute rice and frozen vegetables to make it even quicker.

Snack Ideas

There are lots of easy ways I incorporate healthy snacks into my diet too. Sometimes I blend a protein shake with frozen fruit and/or spinach to get some extra fruits and vegetables in. I’ll also wrap deli meat with sliced cheese for a quick snack. You could have string cheese or a Babybel wedge with some almonds too. My husband loves cottage cheese, which is another good option for protein, but it’s not my favorite. If I want something sweet, I may have apples with peanut butter or rice cakes with almond butter and sliced banana. There are lots of options! These are all quick snacks that you can eat inbetween feeding and playing with babies too! Because we all know there’s not time for elaborate snacks when you’re a new mom.

Becoming a mom rocked my world in the biggest and best way! But I’ll admit it has been hard to get back on track with a healthy lifestyle.
